Today I will share the South Indian special IDLI. It is mostly served as a savory breakfast or lunch. But I changed the traditional recipe to make it look and even taste different.
SWEET IDLIS, my creation.
Ingredients:
2 cups of rice
1 cup of white lentils
1 tsp salt
1/2 cup jaggery
1 cup fresh grated coconut
3-4 cardamom pods
1/2 tsp coconut oil to grease the mold
7-8 strawberries with juice
few mint leaves. I used some edible decorative leaves.
Around noon wash and soak rice and lentils for around 6 hours.

Pour the paste into a bowl.
Grind the rice coarsely in the mixer. and pour the rice paste from the mixer into the lentil mixture.
Thoroughly mix the lentil and rice mixture using a spoon or a hand blender. Keep the mixture aside, for the process of self-fermentation overnight.
The next day it will look like this.
Mix salt properly in the mixture.
Mix jaggery and coconut with crushed cardamom and keep aside.
spoon some batter into the molds and then the coconut-jaggery mixture.
Carefully put the mold stand in the steamer. Or make any adjustments with cups or plates in the regular steamer.
Check them using the fork or pin method when the pin or fork comes clean they are done.
After they are cooked, cool them for 2 minutes and remove them from the mold using a large spoon.
Serve them when they are warm. These idlis are nice and soft sweet and very tasty healthy food.
Decorate them how you want I used strawberries and mint leaves.
