Iranians eat this cheese in breakfast with butter and bread.
Fresh bread, cheese and butter with sweet tea is a breakfast that all Iranians love.
Approximately one kilogram of cheese is obtained from every 5 kilograms of milk.
First, pour the milk into a pot to boil. When it boils, add a little salt and stir. We have to use an acid, and I used white vinegar. Pour the vinegar on the boiling milk and reduce the heat under the pot.
We wait for a while until the cheese separates from the water in the milk.
To close the cheeses, we take a basket and put a container under it so that we can keep some of the whey. We put a thin cotton cloth inside the basket.
When the milk inside the cheeses is visible, we gently remove the cheeses with a ladle and pour them on the cloth.
In this way, the cheese is separated from the water. When the water in the cloth passes through the cloth, we cover the cheese with a cloth and place a heavy object on the cloth. I used a bowl full of water. In this way, the whey is completely extracted. If we do not do this, when we cut the cheese and keep it in whey, the cheeses will fall apart.
After a few hours, we remove the heavy object from the cloth and cut the cheese and pour it into the reserved whey. We can add a little salt to this water to have a more delicious cheese.
