🍀Watercress Soup with Yam. Nutritious and surprising preparation

This is a cream of watercress soup with yam and crispy garlic. A delicious soup and most importantly a superfood. Watercress is a plant with leaves that have a very delicious and special flavor. I have loved watercress since I was a child. My dad would often buy it and we would eat it in salads.

When I was in college, I worked in a vegetarian restaurant where I tasted many types of soup with incredible ingredients that made me savor and appreciate the different vegetables, herbs, greens and fruits that nature gives us. Flavors, combinations and consistencies that I never imagined could be prepared. Yesterday with much love and enthusiasm I went to the vegetable market to buy watercress and yams to prepare a very special soup, like the ones I remember so well.

As soon as I got back from my shopping, I prepared my soup to take advantage of the freshness of my ingredients.
I loved the thick consistency with a strong flavor from the watercress. A perfect combination. Here is my step by step. The quantities used for this opportunity are for two people.

INGREDIENTS
1/2 kilo of yam
300 grams of watercress
6 cloves of garlic
500 ml of water.
Salt to taste.

PREPARATION
Friends, I love cooking and lately I have learned to prepare my recipes adding few ingredients. This time I wanted to highlight the flavor of watercress, which I love.

The first thing I did was to clean the watercress very well; cutting, separating and discarding the root and thick stems. The rest I took and washed it very well with plenty of water. Then I put it for five minutes in water with vinegar. On the other hand, I took the yam, peeled it and cut it into pieces. I also washed it with water and salt because this vegetable oxidizes and thus prevent it from getting dark.

In a pot with water I put the yam and added salt and two cloves of garlic, I took it to the fire for 5 minutes since this vegetable softens quickly. I added the watercress that I previously strained and let it boil for two minutes. When the time had elapsed, I removed it from the fire and let it cool down to a suitable temperature. Finally, I added the contents of the pot to the blender until I got my mixture.

A delightful soup, with a thick consistency and very beautiful. I was missing a special crunchy touch to my super nutritious watercress and yam soup. So I sliced the garlic cloves and fried them in olive oil. Once browned and crispy I added them to my soup and that was it. My friends, this soup is exquisite. I really indulged myself and enjoyed it to the fullest. I loved it.
