Today I am sharing a very nutritious and delicious preparation. A few days ago I shared with you a recipe with pumpkin and spinach croquettes. I reserved part of my mixture for another preparation. This was the opportunity to prepare another dish with that base. I loved the ease and versatility of pumpkin and also the different possibilities to create new delicious recipes.
For this occasion I used my mixture stored in the refrigerator. The next day I prepared my lunch quickly and without wasting time since I had most of the preparation ready. To begin with, I should tell you that the proportions used were enough for one person.
🍀INGREDIENTS🍀
Approximately 250 grams of pumpkin and spinach mix.
4 tablespoons of oat flour.
4 tablespoons of olive oil.
10 cloves of garlic.
150 grams of fresh basil.
Salt to taste.
1 liter of water to cook the gnocchi.
🍀PREPARATION🍀
The first thing was to take the mixture out of the refrigerator. It had the consistency to form the gnocchi. I added a tablespoon of oatmeal and a tablespoon of olive oil to make it more manageable. I proceeded to clear the kitchen area and added two tablespoons of oatmeal to form my roll. I formed it to the thickness of my index finger and cut it to about 1 centimeter.
In a plate with oatmeal flour I added them to seal with flour all their parts. Once I finished with all the mixture, I placed my pot with water and salt over medium heat. When it boiled I carefully added the gnocchi. In three minutes they began to rise to the surface of my pot and it was time to remove them with a strainer. This step should also be removed carefully as the gnocchi float to the surface.
It was incredible how this provocative preparation turned out. I had to give it a flavor that would bring out all the ingredients of my recipe. Since I love pesto sauce, I decided to use it to accompany my delicious gnocchi. For my pesto I took my basil and washed it very well. Then I removed the leaves from the stems, washed them again and put them in the blender.
I also peeled the garlic cloves and added them to the blender. I added the salt and olive oil and started to process. I added two tablespoons of water to facilitate the blending. I got a thick, aromatic and very delicious mixture. This sauce is one of my favorites. I love the combination of these three ingredients that besides being delicious are beneficial for our health.
Friends I loved making this preparation. I gave myself a treat. We have to get creative and practical when it comes to cooking and planning our meals. Let's take advantage of the nutritional value of seasonal vegetables. And of course enjoy a delicious dish. A pleasure to share with you all.
