Who doesn't want to eat a coconut kiss?
The coconut kisses are a very simple snack to make and in my house I used to prepare them frequently to my children since they were very young, especially on Sundays. I have to say that the recipe I learned was taught to me by my younger sister when we were studying at the university. She used to prepare coconut kisses to sell and thus have extra income for her expenses and studies.
Since always the coconut kisses and other Creole sweets are made by many families to be marketed and in some cases are the main source of work. Nowadays in many places you can see people selling Besos de Coco. Today I am excited to present a very special recipe that I love and that brings back beautiful memories.
I hope you can prepare at home these sweets that are the perfect snack and I am proud to know that it is part of the Sucre Gastronomy and of all the eastern part of the country. It is a favorite of young and old alike, and do you like Besos de Coco??
The ingredients that I share today yielded for 40 coconut kisses.
INGREDIENTS
3 medium dry coconuts.
1 Kilo of leavening flour
1 piece of paperón
10 cloves
1 teaspoon of sodium bicarbonate.
1/2 teaspoon of salt.
4 cups of water.
PREPARATION
The first thing I did was to put the PAPELON, water and cloves in a pot. I took it to medium heat for 30 minutes to wait for all the papelón to melt, like a kind of syrup. Once it was ready, I removed it from the fire and put it to cool. When it was at room temperature I passed it through a strainer to remove the cloves and impurities.
Then I took the coconuts and removed the water and the hard shell. Once peeled, I washed them very well and began to grate them through the thickest part of my stalk. Now my main ingredients were ready to make the mixture for my coconut kisses. I mixed the coconuts with the paprika syrup and mixed very well with a wooden spoon. I added the flour sifted with the baking soda and salt.
Everything is mixed very well. In a buttered and floured pan are placed with a mold that will be the same amount of mixture to form the kisses of the same size. They can also be placed in a cake pan and then chop the pieces of the same size. This time I wanted to prepare them individually. Previously heat the oven to 250 for 20 minutes.
These kisses were a great success my friends. I loved preparing this recipe that my sister taught me and that is a treasure that I keep in my heart. I hope that many people take ownership of the recipes that are part of the Gastronomy of our land, practice it and teach it to others. Thus maintaining our essence and Gastronomic Heritage for generations.
