I don't know how you figured that the cuts look tough ...you have all the colors in there,from medium rare inside to medium well-done on the outside...the meat was full of juice...when you have a tough cut,the meat is overcooked with a greyish blunt color and is dry.
I couldn't even finish the whole thing, I had like a quarter left and in the morning I just went for the 3 slices,cold as they were..it tasted better than Tiramisu 😎😃
I really wish that I can serve you some of this tough cuts some day..😜
