    • If using a whisk for spinning the sugar, snip off the ends of the whisk loops to create "spokes." This will help when twirling the sugar.
    • Lightly coat the whisk or wires with nonstick cooking spray to prevent the sugar from sticking.
  2. Make the Sugar Syrup

    • In a medium saucepan, combine 2 cups of sugar, ½ cup of light corn syrup, and ½ cup of water.
    • Heat the mixture over medium heat, stirring until the sugar dissolves completely.
    • Attach the candy thermometer to the side of the pan, making sure the tip is submerged in the syrup but not touching the bottom of the pan.
  3. Heat to the Right Temperature
