One use-case I have seen in DARPA research is the use of a blockchain to monitor the processes of an AI. Sometimes a machine learning algorithm may throw up results that bemuse humans, but the speed of processing means that it is not easy to work out how the ML algo reached its conclusions. By monitoring each step by sending transactions to a blockchain, the idea is to be able to replay how the system reached its output.

Can't recall the name, but have also seen AI used as a gatekeeper for txns before they get posted, or even if they ever make it, onto the chain.
