In general collateralised stablecoins are very simple; yes, they require robust accounting and high security but are really no different to tokenised assets.
What is new, and interesting, are algorithmic stablecoins. We can see that the banksters really - really - hate those, ergo they are powerful. They are also more complex as need to stress-test the underlying algorithms before someone else does.
