How to Make Delicious Khoosa (Bottle Gourd Curry)

Khoosa, also known as bottle gourd curry, is a light, nutritious, and flavorful dish popular in South Asian cuisine. It's easy to prepare, wholesome, and perfect for a hearty meal. Here's a simple recipe to make khoosa at home:


Ingredients

  • 1 medium bottle gourd (peeled and diced)
  • 2 medium onions (finely chopped)
  • 2 medium tomatoes (pureed or finely chopped)
  • 2 green chilies (slit)
  • 2-3 cloves of garlic (minced)
  • 1-inch piece of ginger (grated)
  • 2-3 tablespoons cooking oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • Fresh coriander leaves (for garnish)

Instructions

  1. Prepare the Ingredients
    Peel and dice the bottle gourd into small cubes. Set it aside.

  2. Heat Oil and Sauté Spices
    In a pan, heat the oil and add cumin seeds. Once they splutter, add chopped onions. Sauté until golden brown.

  3. Add Garlic, Ginger, and Tomatoes
    Stir in the garlic, ginger, and green chilies. Cook for a minute until fragrant. Add the pureed tomatoes and cook until the oil separates from the mixture.

  4. Season the Base
    Add turmeric, red chili powder, coriander powder, and salt. Mix well and cook for another 1-2 minutes.

  5. Add Bottle Gourd
    Add the diced bottle gourd to the pan. Stir well to coat it with the spice mixture.

  1. Cook the Curry
    Cover and cook on medium heat for 15-20 minutes, stirring occasionally. If needed, add a little water to prevent sticking. Cook until the bottle gourd becomes soft and tender.
