Our Binignit Entry for Good Friday! (YESTERDAY)
•Binignit is a type of rice gruel popular in the Visayan Region...It is a sweet stew of fruits, tubers and glutinous rice.
•It's served either hot or cold and enjoyed as a dessert or mid-day snack, and its a filling meal in a Holy Week, specially on GOOD FRIDAY, when Catholics do the fasting and refrain from eating meat.
•Among the Visayan people, the dish is traditionally served during the Holy Week, for most Cebuanos the dessert evokes a nostalgic feeling bringing back the old times.
•It became the soul food that every Visayan craves specially during the hot days.
INGREDIENTS:
•Sago
•Landang
•Saging (Saba)
•Gata (Coconut Milk)
•Gabi
•Kamote
•Vanilla Extract (not in the picture)
•Brown Sugar (not in the picture)
•Glutinous Rice (malagkit)
•Water
INSTRUCTIONS:
•In a pot over medium heat, add the water and bring into a simmer.
•Add the malagkit( glutinous rice)and cook for about 20 mins.
•Add the gabi and the kamote, cook and stirring occasionally until becomes tender.
•Add the sago, landang and the banana, Stir to combine.
•Continue to cook for about 15- 20 mins. Or until rice, tubers, and fruits are cooked and the liquids becomes thickened.
•Add the Vanilla Extract, Brown Sugar and the Coconut Milk.
•Serve hot and Enjoy.
