豆腐的制作方法如下 ...

把黄豆浸在水里,泡水后变大和变软,取出后,用磨机将其磨成粉状,用滤布来过滤掉豆渣,再放入锅中,加水煮开 ...

这个时候,黄豆里的蛋白质团粒会被水滚着不停地滚动,但却不会聚在一起,这种状态称之为“胶体” ...

按照比例来加入卤水,一边搅动,这些蛋白质团粒便会慢慢的聚在一起,形成了 "豆腐脑" ...

豆浆和卤水的比例极为关键,多一点或者少一点,都是不行的,这个比例,比制作卤水的方子还要重要 ...

一斤黄豆大约能做出五~六斤的豆腐 ...
