鸡、鸭、鹅肉,何者较好?

我这里所说的好,是指对于人体健康的影响,而非口感,也非烹饪和料理 ...

鸡、鸭、鹅属于飞禽类,和游鱼海鲜,同属于白肉,而猪、牛、羊等走兽类为红肉 ...

不管是白肉还是红肉,都是优良的蛋白质,但在蛋白质的份量相同的情况之下,白肉的饱和脂肪、胆固醇、热量都会较低,所以吃白肉是最好的 ...

游鱼海鲜包罗万千,种类太多了,若仅分为游鱼和海鲜两大类的话,游鱼的饱和脂肪、胆固醇、热量是最低的,海鲜类则是少数比游鱼要低,多数要比游鱼来得高,而飞禽类的饱和脂肪、胆固醇、热量会较游鱼海鲜要高,走兽类又更高 ...

所以爱吃肉的,以游鱼最佳,海鲜次之,飞禽又次之,最好不要吃走兽类 ...

鸡、鸭、鹅肉,何者较好?

热量:最高为鸭肉,再来是鸡肉,鹅肉最低。

胆固醇:最高为鸭肉,其次是鹅肉,鸡肉最低。

铁质:最高为鸭肉,其次是鹅肉,鸡肉最低。

但鸡、鸭、鹅,其内脏的胆固醇皆较高,不可吃,走兽类的猪、牛、羊也一样是内脏的胆固较高,切记不可吃。

所以鸡、鸭、鹅,爱吃者,首选鸡,其次为鹅,不要吃鸭子 ...
