红茶与绿茶

红茶与绿茶并不是指茶的品种,主要是以制茶工艺来做为区别,在制作过程中,采用了发酵、氧化的步骤,被称之为红茶,未采用发酵、氧化的步骤,被称之为绿茶 ...

而未采用发酵、氧化等步骤的茶叶,其茶水色常呈现绿色,故被称之为绿茶,采用了发酵、氧化等步骤的茶叶,其茶水色常呈现红色,故常被称之为红茶...

红茶于发酵过程中会产生糖分,故味道会较为浓厚,喜欢引用红茶的人较多 ...

绿茶富含儿茶素,
红茶于发酵的过程之中,儿茶素会被破坏殆尽,但于氧化的过程之中,会产生茶黄素,
这两者都能够帮助身体抗氧化,都可以预防心脏相关疾病,并帮助降血压、减少体内的坏胆固醇与三酸甘油脂等等 ...

若以抗氧化的功效来说,绿茶优于红茶 ...

许多未采用发酵、氧化步骤的绿茶,说是绿茶,但泡出来的茶水色却非绿色,亦是红色,只不过,相对于红茶而言,颜色没有那么红而已 ....

所以,茶水色真正是绿色的绿茶并不多,很多绿茶是浅红色的...
