Quick & Easy SHORTBREAD Recipe (that's also vegan & gluten-free)

Shortbread is a fantastic holiday treat that's easily vegan and gluten-free (VGF) to satisfy almost everybody. It's quick to make, doesn't require chilling, and tastes just as good or even better than when made with wheat flour. Nobody has to know that they're VGF if you don't want. They're guaranteed to pack on the pounds this winter!

Prep time: 5 min | Bake time: 15 min | Total: 20 min | Yields 12

🥣Ingredients:🥣

  • 1/2 cup butter*
  • 1/4 cup powdered icing sugar
  • 1/3 cup flour (I recommend Bob's Red Mill 1:1)
  • 1/3 cup almond flour (fine ground)
  • 1/3 cup cornstarch
  • Pinch of vanilla and salt
  • Optional: chocolate chips, jam, icing, sprinkles, etc.

*Not all becel margarine is dairy-free, even the ones that say olive oil or something. Read the ingredients carefully if you're making them vegan.

🍪🥛Directions:🍪🥛

Combine ingredients in order listed. Infuse butter if desired. Press cookies a half-inch thick and bake at 350F for 15 minutes. Add chocolate chips if desired, or make a "thumbprint" for a dollop of jam. Turn once in-between. Let stand after. Cookies are done when white on top and golden on the bottom. Once cooled, add icing if desired. ENJOY!

I can confirm these cookies are insanely good. Classic shortbread! Amazingly easy recipe (20 minutes and they're done), and they just so happen to not have wheat (unless you want them to). Since they don't have eggs or dairy, they're also vegan (without anything being missing). And hey.... JAM!

Is everyone enjoying their christmas feasts and yule logs and desserts? I hope that was a decent preamble on this recipe. I can't stand recipes that have a HUGE story at the beginning and you literally can't find where the recipe starts like Ctrl+F+Ing.

You can brag that these cookies are VGF, or nobody has to know. Also, it's easy to make it organic, if you want, so even more people can eat it - the only thing bad about it is fat and carbs. It's also easy to infuse these cookies for extra holiday cheer! I like the taste of weed cookies. Cookies help me gag down mushrooms shiver, nowhere near as pleasant as weed. The two in combination have a good knockout effect if you have bad insomnia. Hempy holidays!

Recipes that don't get down to business are annoying. I've done content like that before, though, so I know how it happens - you aren't necessarily trying to do a straightforward recipe article/video/etc... but your content does include a recipe so you tag/title it that way. They aren't trying to be annoying! But yeah, clearcut functional recipes like this are certainly appreciated. And these are great cookies!
