How to Make Chicken Curry at Home

Ingredients

For the marinade:

  • 500g chicken (bone-in or boneless, as preferred)
  • 1/2 cup plain yogurt
  • 1 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • 1 tsp salt
  • 1 tbsp lemon juice

For the curry:

  • 2 tbsp oil (vegetable or mustard oil works well)
  • 2 medium onions, finely chopped
  • 2 medium tomatoes, finely chopped or blended into a puree
  • 1 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 2-3 green chilies (optional, for extra spice)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 2 tsp coriander powder
  • 1 tsp garam masala
  • 1 cup coconut milk or 1/2 cup heavy cream (optional, for a creamier curry)
  • Fresh cilantro (for garnish)

Optional additions:

  • 1-2 potatoes, diced (for added texture)

Instructions

Step 1: Marinate the Chicken

  1. In a bowl, mix yogurt, turmeric, chili powder, salt, and lemon juice.
  2. Add the chicken pieces to the mixture and coat evenly.
  3. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).

Step 2: Prepare the Curry Base

  1. Heat oil in a large pan over medium heat.
  2. Add cumin seeds and let them sizzle for 30 seconds.
  3. Add the chopped onions and cook until golden brown (about 7-10 minutes).
  4. Stir in the ginger-garlic paste and sauté for 1-2 minutes until fragrant.

Step 3: Build the Curry

  1. Add the tomato puree and cook until the oil separates from the mixture (about 8-10 minutes).
  2. Add turmeric, chili powder, and coriander powder. Stir well to combine.

Step 4: Cook the Chicken

  1. Add the marinated chicken to the pan and stir to coat it in the masala.
  2. Cover and cook for 10-15 minutes on medium heat, stirring occasionally.
  3. If using potatoes, add them now and mix well.

Step 5: Simmer the Curry

  1. Add 1 cup of water (or adjust based on desired consistency).
  2. Cover and let it simmer for 20-25 minutes, or until the chicken is tender and fully cooked.
  3. Stir in coconut milk or cream (if using) and cook for another 5 minutes.
