Ingredients:
For the Chicken Marinade:
- 500g (1 lb) chicken breast or thighs, cut into chunks
- 1 cup plain yogurt
- 1 tbsp lemon juice
- 2 tsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp red chili powder (adjust to taste)
- Salt, to taste
For the Sauce:
- 2 tbsp butter
- 1 medium onion, finely chopped
- 2-3 garlic cloves, minced
- 1 tbsp ginger-garlic paste
- 1 cup tomato puree (or 3-4 fresh tomatoes, blended smooth)
- 1/2 cup heavy cream (or substitute with coconut cream for dairy-free)
- 1 tsp garam masala
- 1 tsp cumin powder
- 1 tsp paprika or red chili powder (optional, for extra heat)
- Salt, to taste
- Fresh cilantro (coriander leaves) for garnish
Instructions:
Step 1: Marinate the Chicken
- In a large bowl, mix the yogurt, lemon juice, ginger-garlic paste, and all the spices for the marinade.
- Add the chicken pieces and coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes, or up to overnight for best results.
Step 2: Cook the Chicken
- In a pan, heat a little oil and cook the marinated chicken on medium heat until it’s fully cooked and has a slight char. Set aside.
Step 3: Prepare the Sauce
- In the same pan, melt the butter over medium heat.
- Add the chopped onions and sauté until golden brown.
- Add the minced garlic and ginger-garlic paste, cooking for another 1-2 minutes until fragrant.

Step 4: Combine and Finish
- Add the cooked chicken pieces to the sauce and mix well.
- Pour in the cream, stirring until the sauce is rich and creamy. Simmer for another 5 minutes to allow the flavors to blend.
- Adjust seasoning as needed and garnish with fresh cilantro.
