Butter Chicken, also known as Murgh Makhani, is a rich and creamy dish that’s packed with flavor and perfect for a cozy meal. Here’s an easy recipe to make restaurant-quality butter chicken at home!

Ingredients:

For the Chicken Marinade:

  • 500g (1 lb) chicken breast or thighs, cut into chunks
  • 1 cup plain yogurt
  • 1 tbsp lemon juice
  • 2 tsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp red chili powder (adjust to taste)
  • Salt, to taste

For the Sauce:

  • 2 tbsp butter
  • 1 medium onion, finely chopped
  • 2-3 garlic cloves, minced
  • 1 tbsp ginger-garlic paste
  • 1 cup tomato puree (or 3-4 fresh tomatoes, blended smooth)
  • 1/2 cup heavy cream (or substitute with coconut cream for dairy-free)
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 1 tsp paprika or red chili powder (optional, for extra heat)
  • Salt, to taste
  • Fresh cilantro (coriander leaves) for garnish

Instructions:

Step 1: Marinate the Chicken

  1. In a large bowl, mix the yogurt, lemon juice, ginger-garlic paste, and all the spices for the marinade.
  2. Add the chicken pieces and coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes, or up to overnight for best results.

Step 2: Cook the Chicken

  1. In a pan, heat a little oil and cook the marinated chicken on medium heat until it’s fully cooked and has a slight char. Set aside.

Step 3: Prepare the Sauce

  1. In the same pan, melt the butter over medium heat.
  2. Add the chopped onions and sauté until golden brown.
  3. Add the minced garlic and ginger-garlic paste, cooking for another 1-2 minutes until fragrant.
