Sogogi Moo Guk (Korean radish soup with beef) is my comfort food.
When eating this, all I need is just Kimchi.😁
1 handful of beef(I used boneless ribeye), 2 handful of Korean radish, 10 cups of water.
- Cut the radish into bite size pieces (1 to 1 1/2-inch square, about 1/4-inch thick).
- Cut the scallions into 1 to 1-1/2-inch pieces.
- put the beef in a pot of water and boil it for about 20 minutes(between 20 to 30 mins, depending on the size of beef).
- Take out the beef from the pot and cut to be easy to eat with scissors. then season with soy sauce for the soup, fish sauce(1Tbsp), minced garlic(1Tbsp), a pinch of black pepper. and set aside.
- Add radish and kelp(4x4 in.) to the beef broth and boil for 10 minutes, then remove only the kelp.
- Add the seasoned beef to the broth and boil for another 10 minutes, then add green onions. If you want to add some salt to taste, add it.
