I used smoked turkey, spinach, dried prawns, smoked mackerel, ground egusi (melon seed), and pepper mix to make this soup. I can't help but add smoked turkey to anything I cook since I have a thing for it.

INGREDIENTS

▪︎ If you do not have ogiri, you can omit the iru woro or pete (locust beans).

Method of frying: I adore this approach and frequently employ it. Before adding the remaining ingredients, you first sauté the pulverized melon seed paste in palm oil.

▪︎ In a dish, combine the ground melon with roughly a cup of water to make a paste. Set the mixture aside. Spinach should be cleaned, chopped, and then drained in a colander.
▪︎ Place a large pan on medium heat, add the saved chopped onions, and heat for about 3 minutes (do not bleach oil).
▪︎ Stir in the pepper mixture and locust beans. 5 minutes of boiling is required.
Bit by bit add the egusi paste to the pepper, turn the heat down, don't stir, and put a lid on the pot. another 10 minutes of cooking.
▪︎ Take off the top and give the soup a little stir. At this time, the egusi would be lumpy; use the back of a ladle to smash the lumps into the correct size and texture.
▪︎ Stir in the beef stock (if using), ground crayfish, and smoked turkey before serving. Bouillon cubes should be added, tasted, and adjusted as necessary. This soup already had salt from the smoked turkey and mackerel, so I didn't add any to it. Cook for an additional 10 minutes, stirring occasionally to prevent scorching as necessary.
▪︎ Add shredded smoked mackerel to the soup and gently mix. Cook for a further three to five minutes after adding the chopped spinach. Before serving, turn off the heat and let the food cool for around 10 minutes.
