HOMEMADE KIMCHI

Kimchi is a classic Korean cuisine made out of veggies, garlic, ginger, chili peppers, salt, and fish sauce. The vegetables are pickled and fermented, which was traditionally done to keep them fresh during the winter months.

INGREDIENTS:
1 medium cabbage (about 2 pounds)
Water
1/4 cup salt
2 tablepoons fish sauce
1 teaspoon grated ginger
1 tablespoon grated garlic (5 to 6 cloves)
1 teaspoon sugar
1 to 5 tablespoons Korean red pepper flakes (gochugaru)
