This was stated by Coldiretti Sicilia on the occasion of the world day of this highly sought-after fruit, celebrated all over the world on February 26 when a food that has a series of peculiar characteristics is celebrated, starting with the soil.
The pistachios of Bronte, produced in about 4,000 hectares, (the areas are called "lochi"), grow in the expanses of lava stratified over the centuries (sciara) and from the solidified fire they take all the organoleptic qualities.
To this peculiarity that makes them unique, is added the specialization necessary for the production and harvesting phases, which takes place manually.
Over the years - Coldiretti Sicilia continues - also thanks to its use in the kitchen for both savory and sweet dishes, processing companies have also grown. Thanks to the high specialization, the entrepreneurs have managed to add value to the production that is added to the Protected Designation of Origin (PDO) obtained in 2009 which seals and differentiates the production and which the consumer must look at to ascertain the origin.
