My first choice is from Carl Orff's Carmina Burana. Yes, we all know the "O Fortuna" signature song - amusingly a curse on Fortune's malicious meddling in human affairs. But, to be more attuned to the theme of Autumn and the Oktoberfest, here is the section entitled In Taberna (In The Tavern).
It is interesting how popular Carmina Burana has been, given that it is somewhat anachronistic, being a selection of medieval poems but set to music by Orff in 1935/36 and premiered in 1937. I actually enjoy ancient music, but most people consider it quite a niche category.
I also note that Orff wanted his Carmina Burana to be a "scenic cantata" with on-stage actions to accompany the music. This mixed media style may well be closer to medieval and renaissance "concerts". For example, Shakespeare's plays are supposed to have song and dance interludes - possibly to wake up any members in the audience who'd fallen asleep drunk. The modern idea of sitting rigid in a seat to "enjoy" the entertainment seems to me quite stifling.
How can you sing bawdy drinking songs while sitting still in your seat?

Carl Orff's version is the best known but there is also a fantastic version of the Symphonic Youth Orchestra of Venezuela.
