Last night, I cooked ABC soup, the famous easy soup. Basic ingredients are onions, carrots, potatoes, tomatoes and meat/bones. Just bring to boil everything and you will have a flavourful soup. We ate it with a bowl of warm rice. Since I cooked a big pot yesterday, I had leftover of the soup. This gave me an idea this morning, to have a simple meal to make life easier.
Steamboat Soup
We love steamboat or some called it hot pot. Have a pot of boiling water or preferably broth, then you add in whatever ingredients you prefer. With the leftover ABC soup, it came in handy for me to so steamboat soup today. I added in the fishballs, Japanese gyoza aka dumplings, and seafood cheese tofu.
The ABC soup was already flavourful enough, by adding extra fishballs, tofu and dumplings, the soup became very super yummy.
The children especially love this kind of soup. The love to flood their plate of rice with the soup and all the ingredients.
I couldn't stand with it without greens. So I stirred fry one plate of stir fry lettuces with garlic and onion and oyster sauce. Then, it was a hearty lunch.
My husband and I did not flood the rice with the soup and ingredients. Rather, we ate separately, because we also loved to dip those ingredients into chilli sauce. Very delicious.
During trying times like now the pandemic and we are still in lockdown, we are very grateful with food on the table. Even if it is just plain bread and a cup of water. Bless the world to heal. Bless everyone with great health.
