You all know I love to cook, and that is why I create a blog related to the traditional recipe. Let me tell you how I became passionate about cooking. I belong from Kolkata, and by religion, I am Bengali. Today I am sharing a secret of Bengalis; they are basically foodies. I told you before about one of my cousins, and I spent my holidays a lot in my childhood. He is also passionate about cooking, and as he is much senior to me. I learn a lot from him. Today I am sharing his recipe and pictures while cooking. I also learned this recipe from him. Without wasting any more time, let's start making 'Rose Momo.'
Ingredients:-
1.All-purpose flour- 3cups.
2.Baking powder- 2tsp.
3.Chicken- 2-1/2cups(minced).
4.Onion-2medium(minced).
5.Garlic-2tbsp(minced).
6.Green chilies-4-5(minced)or according to your taste.
7.Ginger-2-inch(minced).
8.Black peppercorns-3/4tsp.
9.Soy sauce-1/2tbsp.
10.Red food color- 1tsp.
11.Salt- To taste.
12.Oil/butter- As required.
Preparation Method:-
Step 1- First, take a mixing bowl. Add all-purpose flour, salt, baking powder, and lukewarm water. Mix all ingredients well to form a dough. Now, add food color and knead the dough again. The dough shouldn't be too hard or too soft. It should be medium soft.
Step 2- Next, cover the dough with a muslin wet cloth. Set aside for 30 minutes.
Step 3- Now, place a wok on medium flame. Add 2tbsp of oil. Once oil will be heated add, garlic minced, onion minced, green chili minced, ginger minced. Saute until it becomes soft and raw aroma evaporates.
Step 4- Next, add minced chicken, salt, black peppercorns, soya sauce. Stir and combine all ingredients well with chicken mince. Cook until all moisture dries out. Once you get the proper texture, transfer the chicken mixture to a bowl.
Step 5- Now, dust the floor with flour and knead the dough again or 5-6minutes until getting a soft, smooth dough.
Step 6- Divide the dough into equal portions. Make a ball with a small part of the dough.
Step 7- Dust the floor and roll the dough with the help of a rolling pin. Take a cookie cutter or any circle small round shape bowl or lid. Cut round shape pieces with the dough.
Step 8- Now place 3 round-shaped rolls one after another at the end parts of every flat roll (refer picture).
Step 9- Place 1tbsp of stuffing in the central line of the dough(lengthwise). Now fold the dough from the middle portion, with the help of your fingers; secure the stuffing. Start rolling the dough from the side.
Step 10- Outer part will automatically shape like a rose. With your finger gently, out a few petals to give a natural look. Follow the same process with the remaining dough.
Step 11- Now, grease a steamer with oil or butter as per your choice. Gently place all rose momos in the steamer. Make sure there is some distance with every momo.
Step 12- Steam momos at least for 30-35 minutes. Now it's ready to serve with tomato-chili chutney and hot chicken soup.
