Today I will share with you a recipe made with brinjal(eggplant). Before sharing with you the details, let me tell you the name of the recipe given by my elder sister. I also love the dish because its smoky flavor makes the dish different from others. Now let me tell you some benefits of brinjal(eggplant). Did you know friends actually eggplant belong from fruit family! Brinjal is very good for diabetic patients. Brinjal helps to produce red blood cells as it has folate. It has antioxidants, high in fiber. I Hope; you like the information. So, let's start making " Brinjal Shirazi."
Ingredients:-
Brinjal(egg plant)- 3 medium.
Tomato- 1large size.
Cilantro leaves- 2tbsp(chopped).
Eggs- 2nos.
Dry red chilies-2-3(can adjust according your desire).
Green chilies-2(chopped).
Mustard oil- 1tbsp.+1tsp more.
Ghee(clarified butter)- 1tbsp.
Garlic- 4-5 cloves (chopped).
Onion- 2medium(chopped).
Turmeric powder-1/4tsp.
Salt-To taste.
Preparation Method:-
Step 1- First, wash brinjal with water and pat dry. Now brush them with mustard oil all over. Make few slits with the help of a knife all over the eggplants. Put the eggplant directly on the flame. Turning often eggplant until completely roasted.
Step 2- Once the eggplant is roasted well, remove it from the flame. Set aside eggplants; until cooldown. Follow the same process for the remaining eggplants. Once the eggplants cool down, remove the skin. Transfer the roasted eggplants to a plate.
Step 3- Now, roast the tomato in the same process and remove the skin. Copped the roasted tomato and set aside.
Step 4- Place a pan on medium flame. Add mustard oil; once oil heated, fry dried red chilies. Take out once they are fried well. Lower the flame.
Step 5- Now, with the help of salt, break the fried red chilies and mix with roasted brinjal.
Step 6- In the same pan, add chopped garlic. Saute until pale golden. Next, add chopped onion. Cook until translucent.
Step 7- Next, add chopped tomatoes. Cook until tomatoes become mushy. Add turmeric powder, chopped green chilies. Combine all ingredients well.
Step 8- Transfer brinjal into the pan. Mix well. Stir occasionally and cook for 5-6 minutes.
Step 9- After 5-6 minutes add eggs. combine well with brinjal. Adjust salt and spice according to your taste at this stage. Add ghee(clarified butter). Mix well.
Step 10- Next add chopped coriander leaves and combine well. Turn off the flame.
Step 11- Now it's ready to serve with Roti or Steamed Rice.
