I am not a fan of squash especially when added in vegetable dishes. However, I wanted something like squash omelette or what we call locally as okoy.
After peeling and slicing the squash, I grated it. I also added grated carrots, cheese, onion, garlic, onion leaves, celery, salt, flour, and eggs.
Fry in a pan, it doesn't have to be deep fried.
Finally, here it is. This is great with tomato ketchup as its dip, or vegetables with salt.
