Cooking Crispy Pata or Crispy Pork Leg

Hi Blurtians! I just want to share my all-time favorite Crispy Pata. Crispy rispy pork leg or commonly called crispy pata is a popular pork dish. This dish can be eaten as a main dish or consume it as beer food or pulutan. It is best eaten when dipped in a spicy vinegar mixture. This dish is usually popular when there is big event like fiestas or birthdays. Though it is abit pricey and quite challenging in cooking but I still love this recipe because it is so yummy especially when the skin is so crispy. You will really have a big appetite.

For this recipe you will need:

  • pork pata or pork leg/s

  • spices like chopped onion and garlic
  • ground pepper to taste
  • salt to taste
  • seasoning to taste
  • oil for deep-frying

Cooking Processes:

There are two major processes involved in making crispy pata. It involves boiling and deep-frying the pork leg.

A. Boiling

It is necessary to tenderize the meat and it helps make the skin crunchy when fried.

*Boil the pork leg/s with enough amount of water.

*Add the spices like the onions and garlic to infuse flavors to the meat.

*Put salt, seasoning and ground pepper to taste.

*Let it boil for an hour or until meat gets tender in medium heat fire.

*Once the meat is tender set aside and let it cool. It is best to put inside the fridge to add crispiness once it is deep-fried.

B. Deep-frying

The other process is deep-frying which completes the dish and it provides a nice crisp texture.

*Prepare generous amount of oil in a pot, enough for the leg to be submerged. Make sure to heat the oil completely before frying the pork leg.

*Grab the pork leg with a long kitchen tong and gently submerge into the hot oil.

*Continue to fry the pork leg until it turns brown and crispy. Turn it over to fry the other side.

*Remove pork leg from the pot and place it on a wire rack or strainer for it to cool down and for excess oil to drip.

*It is best served with rice and vinegar when serve as main dish. Enjoy eating!♥️
