I made Jamaican Corned Beef sauce for the weekend 😊😁

Last weekend I was soaked up in Sports(soccer) though my team gloriously gave their win away with a stupid equalizer, this time around I am doing something more adventurous using my culinary skills. So I made a foreign meal:Jamaican Beef Sauce. This is not my native meal, I just tried something new and my adventurous spirit came out like the Phoenix(grins), not on the pitch or on a hiking trail, this time in the kitchen (haha).

Funny thing is that, over a long time I have not tried my culinary skills due to a lot of reasons, don't get me wrong: I did not go to a professional culinary class, I'm not a pro chef (lol). But I learnt from the best of the best cooks in the world, my late mom and auntie. I still never perfected some of the things I learnt because I rarely try them out, I mean these two people I mentioned could smell too salty food, soup, stew or broth, in fact my aunt could smell boiling water from meters away.

So you can tell how strangely legendary these master cooks are, unfortunately they are no more and I didn't have the chance to them my recipe like I'm showing you guys now. Let the picture talk first, in the photos you will see diced veggies and canned ones, also in the photo are two cans of corned beef I used.

Although I watched a couple of YouTube videos to guide me, its not my traditional meal so I needed some help. I was supposed to use larger amount of canned corned beef but I used two instead(you can use more). Also I had cut and diced the veggies some days back and I had to preserve them in the freezer till I was able to make the sauce, you can see the frozen look if you look closely.

RECIPE/INGREDIENTS:

2 Canned Corned Beef

1 Can of Sweet Corn

1 Can of Chopped Veggies(green peas, carrots, apricots, celery etc)

2 Green Bell Pepper

Carrots

4 Big Tomatoes

Leafy Onions

Two teaspoons of Black pepper

Vegetable Oil

Salt and seasoning.

You can use as much vegetables you want depending on the quantity you are making, I made a smaller quantity because I wasn't sure I'll get it right plus I have to stick to the proportion of my ingredients.

COOKING PROCESS:

Pour a moderate amount of the Vegetable Oil( in my own case I used 3 of tequila shots glass) in a pot/frying pan and let it heat for a a minute. Then add the chopped vegetables and stair continuously as it fries for like 5 minutes. The image below is showing how it looks like when it’s cooked and ready to be served

Add the Canned corned beef after opening and stir to mix with the frying veggies on moderate heat. Also add the canned veggies(after opening and draining the preservating liquids away in a sieve) and stir for another 6 minutes. It will look like the last photo as you can see above. Then off the gas, let it cool and served with Rice, Spaghetti or Yam/Potatoes. It could go well with other meals I might not know off!
