This is my first entry for the Pinoy Recipe Challenge initiated by @Blurtfilipino community.
Paksiw na isda na inadobo with vegetables, you may also add lady finger (okra) and bitter gourd (ampalaya).
Alternatively you can cook this recipe using milkfish ( bangus) or cichlid fish ( tilapia). I bought the fish galunggung for 90 pesos.
Ingredients:
1/2 kilo of galunggong
Cloves garlic
Long green pepper (siling pang-sigang)
1 eggplant sliced
2 thumb-sized ginger peeled and sliced
6 tablespoon soy sauce
4 tablespoon vinegar
Preparations:
Clean and wash the fish.
In cooking pan, put in the sliced ginger and crushed garlic, arrange the fish on top.
Pour vinegar, soy sauce and 1/4 cup of water.
Add the peppercorn, vegetables and long green peppers.
Simmer for about 15 minutes in low fire, until vegetables are tender and cooked.
Add 1 tablespoon of oil before turning off from fire.
Now it is cooked, but my daughter’s would loved to eat even more if the fish and ginger were fried.
