DIY Kombucha Homebrew | It's Fermentation Time 🍵

10 tea bags later of organic black tea and we're a brewing!

I've mixed/dissolved a cup and a half of sugar into apx 16 cups of water plus the steeped tea. Then I added the SCOBY which is about the size of my fist.

Unfortunately it's not really visible in this picture, it's at the back of this 5 Gallon glass vessel. I've already put the brew away in it's dark and semi-warm environment where it will sit for the next 10 days.

It's best not to disturb the brew too much during this time. I will visit once a day to say an incantation and that's it. Hey did you know you can infuse good vibes into your brew? But of course, everything in our perceivable reality is programmed with frequency. Food and brew made with good intentions always tastes the best!

I'll come back in 10 days and give it a little sip to see if it's strong enough. You want some bite to it but you don't want it to turn into vinegar which it would eventually do if left too long.

If after 10 days I want it a little stronger/more fermented then I'll let it sit another day and taste again.

In previous brews I've only ever left it at most two more days. After that I would be into uncharted territory, so I'll go with what I know produces a good brew.

Next Steps

Once the first fermentation is complete and I'm satisfied with the brew I will move onto bottle fermenting. This is where I will bottle the brew with the fruit puree and leave it to ferment for another 3-5 days.

The longer you leave it the more C02 will be trapped in the brew, and I loves me some good carbonation!

Some don't prefer strong carbonation, to each their own. I'll likely go with 4 days and then another day to cool and condition refrigerated before it will be served. Nothing beats a good carbonated beverage that's been in the fridge at least a solid day.

That is a very healthy and delicious drink @cybershade :D
I will make my own Kombucha soon but the SCOBY are difficult to find here in my place if not expensive too.
