Greetings to you all. I decided to participate in "my favourite food contest" organized by @blurtconnect.
So i choosed to prepare porridge cocoyam being one of my favourite food. Read to the end and get an insight on how to prepare this meal.
This meal is popular among Nigerians specifically the East ( Ibo's). When i was a child my mum would usually prepare this meal with local harvested ingredients. I grew up to love everything about it. It has this sweet savoury aroma and taste, a try will convince you.
INGREDIENTS
- coco yam
- Red oil
- Cray fish
- seasoning cubes
- Salt
- pepper
- Onion
- Fish
- scent leaf
RECIPE
First peel the coco yam, then dice them into small cubes, after which you wash them.
After it has been washed, the next step is to transfer it to the cooking pot and add two cups of water. Then cover and leave it to boil for 10 minutes.
After it has boiled for 10minutes add your red oil, seasoning cubes, salt to taste, pepper, onion, crayfish and fish. Then the final ingredient, scent leaf.
Scent leaf is very important for porridge, it gives the porridge a very special aroma and flavour. It is like the life of porridge, porridge without scent leaf is incomplete. At this point turn your porridge and mix well with the ingredients, cover and allow to boil for five more minutes/ till it's tender.
Bring down and serve, your porridge is ready😋😋
