Egusi Soup Preparation | My Favorite Food Contest

Hello my Steemit friends, I will be sharing the steps on how to prepare egusi soup in regards to "my favorite food contest" by @blurtconnect. Egusi soup is a very popular soup in Nigeria, especially in southern Nigeria. It is also popular in some neighbouring west African countries. Some Africans living in other countries also visit Nigerian restaurants in those countries, to eat the food. As a youth and bachelor living alone, this is what I decided to prepare today.

The above picture is the ingredients that I used to prepare the soup. They include the grounded melon seeds, onion, fresh pepper, seasoning cubes, meat, salt, crayfish(grounded with the melon seeds), palm oil and sliced pumpkin leaves. The soup can be prepared according to your financial capacity. You can add fresh, dried or/and smoked fish.

So, the first thing you need to do is to wash your meat/fish, fresh pepper, onion and vegetables. After that, pour some water into an empty pot and put the pot on fire. When the water start heating, pour your meat/fish into the pot, add some salt and allow to boil for about 2 minutes.

Then, pour in your sliced onions, add your seasoning cube, grounded crayfish, pepper and some quantity of palm oil and allow to steam for about 3 minutes.

After that, pour in your grounded melon seeds and stir with your cooking spoon, and allow to steam for about 5 minutes.

The last thing you have to do is to pour in your washed sliced pumpkin leaves and allow to steam for about 15 seconds. After that your soup is ready to enjoy🥰.
Remember to taste the soup for salt checking before bringing the pot down. If you feel, the salt you added before is not enough, you can add a little more but you have to cautious in order not to add too much salt.
You can enjoy the soup with pounded yam, garri (cassava flour), akpu(fermented cassava), semovita etc.
