Materials:
1 medium size potato, 3-4 potatoes, 1 sweet pumpkin, 1 small cauliflower, 1 tomato, 2 eggplants, 1 eggplant, 1 radish, 2 dried chillies, 6-7 green chillies, 2 bay leaves, a little panchphoran, salt to taste, turmeric Spoon, oil as required, 1 tablespoon of ginger, a little cumin powder and a little coriander powder.
Method
Wash all the vegetables and cut them into large pieces. Heat oil in a pan and slice two dried chillies and two bay leaves in the middle. Give it a whirl. When you smell panchforan, first add potatoes, patol and radish. Sprinkle with salt and turmeric and sprinkle with water. When these vegetables are half cooked, add sweet pumpkin and cauliflower. Drain with a little water and add eggplant and tomato. Give slices of green chillies. When all the vegetables are cooked, spread the adabata and coriander leaves and take it down.
Serve hot with rice or bread, even parotta.
