Who doesn't love eating ice cream? It's already summer here in our country and everyone in our home feels the summer heat all day long, and even in the night! After eating our lunch, I decided to make an ice cream for everyone. I have tried making this dessert a few times already and I have enjoyed doing so since I can customize the flavor and chunks to add. Last time, I made coffee and peanut butter flavored ice creams. But today, I tried out something else. It's funny because I just used some of the ingredients I bought when I baked cookies. I didn't want to go near an oven so I decided to use those ingredients for making an ice cream! ☺️
Matcha cheesecake and chocolate flavors
In making this dessert, I tried to document the ingredients and the steps I did to make these ice cream flavors. It's actually my first time taking photos while making something [food] to eat. I didn't know that I would actually enjoy documenting it. So, here it goes...
Ingredients:
- All-purpose cream
- Condensed milk
- Powdered sugar
- Cream cheese
- Vanilla syrup
- Cocoa powder
- Chocolate chips
➱ Making cheesecake chunks
I used 1 tbsp of all-purpose cream, half block of cream cheese, 1 tbsp of powdered sugar, and 1 tsp of vanilla syrup. I used a mixer to blend all the ingredients together. The consistency of the mixture was still thick after mixing, this will give that chunky texture when added to the matcha-flavored ice cream base.
➱ Making the ice cream base
For the base, I used the mixer on a 400ml all-purpose cream to achieve that thick base. Before this, I chilled the cream for a few hours so that it will have that thick texture. When the cream base doubled its volume, I added 140ml of condensed milk to the mixture.
➱ Adding the flavor and chunks!
This was my favorite part! And easiest too. I used 2 tsp matcha powder for the flavoring. This actually depends on the powder you're using. As for me, I have tried and worked with this powder many times already. Some matcha powders have really strong flavor that might over power the ice cream base. After mixing, I added the cheesecake batter that I have set aside a while ago, I topped it in the container where I transferred the matcha-flavored ice cream.
Next, I made the chocolate-flavored ice cream by using 4 tsp of cocoa powder to the ice cream base. I topped it with chocolate chips just like the cookies that I usually bake. I didn't even measure it, I just added a lot to my heart's content. Just like what I do when I'm baking cookies, more chocolate chips, the better! :)
After making those two flavors, I put the containers in the freezer for 4 hours. It was ready in time for our dessert during dinner. I loved the chocolate flavor because it tasted to creamy and luscious. But my family enjoyed the matcha cheesecake flavor more. I'm glad I was able to make this during the weekend. Even though it was tiring to move around and do extra "cooking" during the noon time, I did enjoy making this dessert.
