Cheesy quesadilla — an easy to make afternoon snack 🧀

It's my first weekend away from home after the recent lockdown in Metro Manila. When a stricter community quarantine was implemented, we were advised to work from home for almost two months. It became unfamiliar for me how I usually spend my Saturdays in the city in this current pandemic. Until lunch time I was binge watching the Korean drama Vincenzo, after getting out of bed, I decided to make this easy afternoon snack —cheesy quesadilla! 🌞There's actually a Mexican restaurant near our apartment, I have tasted almost everything in their menu, that's why I wanted to try making my own cheesy quesadilla.

Tortilla wrap. I just used two pieces of this wrap to make two servings, for me and for my sister. I put the wrap on a heated pan to toast until it's a little shade of brown. The wrap is soft and turns crisp as it gets warm on the pan.

Cheese. I used different kinds of cheese and a lot. It has been my habit to mix different kinds so it will have a creamier and more delightful taste. It would have been much better if I had mozarella, I used a quickmelt cheese as a substitute to get that sticky and dense cheese filling. After warming the tortilla wrap on the pan, I added layers of these different cheeses.

Tomatoes and bell pepper. The cheesy quesadilla I usually buy from the restaurant near us have diced tomatoes mixed with the cheese filling. I used bell pepper to add flavor and as a spice to the quesadilla. It also gives a delicious smell to the quesadilla. I put these diced tomatoes and bell pepper on top of the layered cheeses and carefully folded the wrap in half.

For three minutes, I pressed down the filled tortilla wrap on the pan until the cheese in between melts to perfection. Good thing I used a quickmelt cheese since it make the folded wrap stick together. This snack was so easy to make and easy to finish at the same time. 😅 It's a perfect snack to make especially when you're in a hurry and needed something easy to make.
