Making 간장 수육 ganjang sooyuk (soy sauce boiled pork butt and front leg) it will be paired with lettuce wrap and perilla leaf wrap.

- Par boil pork of choice (I usually use pork belly, pork front leg but this time I also added pork butt which is actually shoulder meat) in water and soju for 30 minutes.
- Slice the meat in to 2x4 inch block and add to pot with 1 part soy sauce, 2 parts water (enough to submerge the meat), good amount of minced garlic, brown sugar to taste, bit of minced ginger, 2 heaping spoons of instant coffee (helps with the smell), couple of shots of soju and boil for 30 minutes at medium heat.
- Take out of the broth and slice and sprinkle with toasted sesame seeds and serve with variety of lettuce, leaves and herbs.
*If you like it a bit spicy add sliced serrano or jalapeno chilis or dried chilies.
