My wife better hurry or I’m gonna end up eating the whole pot of this myself. Since I was a kid, when my mom would make it, I couldn’t get enough. Now, I make it myself. This is Thai oxtail soup (“soop hahng wahr”), a Thai-Muslim dish. It’s sour (from lime juice), spicy (from fresh Thai chilies), sweet from the stewed tomatoes and onions and topping of fried shallots, and aromatic and herbaceous (from the topping of fresh celery leaves and cilantro, as well as the lemongrass, kaffir lime leaves, and various spices used in the several hours of simmering this broth) — not to mention the fall-off-the-bone meat of the oxtail from the several hours of simmering. 😋
