Quick and easy shrimp fried rice with few ingredients. Learning that sometimes less ingredients is better than more in cooking. 🤷🏾♀️
Ingredients;
1 medium onion
1 Carrot
4 stalks of green onion
Small piece of ginger
2tsp  minced garlic
3tbsp dark soy source
1tbsp chicken broth
1tsp sugar
3tbsp vegetable oil
2 eggs(scrambled)
2 pounds fresh shrimp
4 cups cooked day old rice
Steps;
Marinate shrimp in 1tbsp soy source and set aside.
Combine the rest of the soy sauce, chicken broth, sugar and set aside.
Chop your veggies and ginger.
Beat the eggs together and fry in about 1/2tsp oil scrambled and set aside.
On high heat fry shrimp in vegetable oil till pink but not fully cooked.
Add chopped carrot and ginger and sauté for 30 seconds.
Add onions and the white part of your green onions and sauté for 30 seconds.
Add garlic and sauté for another 30 seconds.
Add your rice in three parts then add the source and mix well.
Toss in the green onions and enjoy 😉!
