Carbonara Paste 🍝

INGREDIENTS:

500gr of bacon
6 eggs
250 gr of pecorino cheese
1kg of short pasta (preferably)
Olive oil
1 teaspoon of salt

PREPARATION:

In a frying pan, fry the bacon (chopped crosswise) with a little olive oil

In a pot, cook the pasta over medium heat in water until it covers the pasta and add a teaspoon of salt and stir every so often to prevent the pasta from sticking

Separate the 6 egg yolks in a bowl and stir with a whisk or fork

Add about 6 tablespoons of pecorino cheese and stir with the utensil of your choice

Once the bacon is cooked

Added to the paste and stirred

Once the paste is well stirred with the bacon, (the yolks are beaten with the little bit of water that was taken out of the paste so that the mixture curdles) then it is added and continues to be mixed

You can also add pepper to taste

Then it is served on a plate and enjoyed.
