今天去超市看到牛肉便宜,才18块钱一大块,比猪肉还便宜,看着还挺嫩的,用来炒一定很不错,再买了点湖南尖椒,就是长长的那种。
先将牛肉切成片,加入盐、胡椒粉、淀粉、由腌制。
准备一下配料,将尖椒切成长条,姜切成姜丝,蒜剁成蒜末。
热锅烧油,先将牛肉滑油至七成熟后乘出备用。
锅里再加一点油,加入姜蒜炒香,再加入一勺的郫县豆瓣酱炒出红油。
接着加入尖椒炒出香味后倒入牛肉,开大火快速翻炒几下就可以出锅了,不用炒太久不然会老,而且不用再调味了,牛肉本身的味道和豆瓣酱就已经够味了。
今天买的牛肉很嫩,炒出来一点都不老,加下尖椒的辣味,十分的开胃下饭。
