Plant-Based Tofu Scramble - Vegan Healthy Breakfest

When it comes to making a homemade healthy plant-based meal you can be sure that this tasty tofu scramble will hit the spot.


When it comes to the ingredients you can almost add any veggies you can think of including mushrooms.

The ingredients are as follows, I have not put measurements as that depends on the amount you want to make.

Ingredients

  1. Garlic - Diced fine
  2. Red / Green Pepper - Diced to the size you like
  3. Broccoli - I cut the stalk off and used just to florets. ( First time using this and it was amazing)

4 Tofu - I like firm and extra firm just for more texture.
5 Breakfast sausage (seitan)
6 Nutritional yeast

spices -

Tumeric

Pepper

Smoked paprika

Red chilli flakes


Once the garlic has been cooking for around 3-5 mins you can add the peppers in, At this point, you may want to add some water to the pan to stop it from sticking.

I like to leave this cooking for about 5 mins as well, This gets the peppers soft. You can now add the broccoli to the pan and add some more water to help steam/cook the broccoli. This again I would say leave for about 5 mins to help soften it up as well.


In a separate pan, I like to cut up my seitan into bite-size pieces and crisp them up a bit.

Now that the vegetables are done and the seitan is finished you can crumble up the tofu into bite-size pieces as well. At this time I like to make a nouch sauce with plant-based milk or water by just mixing the nouch with the milk.

Then you will drizzle the mix over the veggies and tofu. besides the massive benefits to nouch it will add a nice nutty cheese flavour.

Once that is added cook for another 5 mins, It is time to sit down and enjoy your healthy plant-based vegan cruelty-free meal.
