Today,I cooked ginat-an. It's a Filipino culture that ginat-an is a food being served during Good Friday.
We called it ginat-an in our locality. In Bisaya, it is called binignit. Ginat-an is a glutinous dessert. I made my own version of ginat-an.
Here are the ingredients:
- 1/2 kg glutinous rice
- 3/4 kg brown sugar
- 1 kg sliced banana saba
- 1 kg sliced sweet potato
- 1 kg grated cassava balls
- 1/4 kg sliced cassava
- 1/2 kg sliced bisol
- 1 kg sliced gabi
- 1/4 kg sago
- 2 tbsp vanilla essence
- 1 cup pure coconut milk
- 3 pitcher water for a mixture of coconut milk
- 1 tbsp salt
Procedures:
- Clean, peel and slice the 1kg banana saba, 1kg sweet potatoes, 1/4kg cassava, bisol and gabi.
- Clean, peel, grate the 1kg cassava. Add 1/4 cup of sugar, mix well and make cassava balls.
- Wash and cook the sago in a little pot.
- For the grated coconut squeeze first without adding water to get the pure coconut milk. For the second squeeze, add 3 pitchers of water for a coconut mixture as soup in making ginat-an.
- Wash the glutinous rice.
- By the way, I am cooking using fire woods. Coz, it is more tastier if ginat-an is cook using firewoods. 😃
- When the firewoods and big pot with a mixture of coconut milk is ready, we are ready to cook. 😃
- Just add together the glutinous rice, sliced sweet potatoes, sliced cassava, sliced bisol and sliced gabi.
- When it boils, stir the mixture.
- Add the sugar, vanilla essence and salt. Mix well.
- Add cassava balls, sliced banana saba and cooked sago. Do not mix. Cover the pot and let it boil.
- When it boils, stir well.
- Add the pure coconut milk. Mix well.
- Let it cook and stir continuously.
- Taste if all ingredients are cook already. 😃
- When it's already cooked, remove from fire. Serve while hot. 😋
Actually, ginat-an is best served either hot or cold. 😋
I am selling dishes at a very affordable price. But, today's food is not for sale. I shared it to the workers next house. 😃
