I will try to tell and show how I bake buns according to my mother's recipe. Mom always had delicious pastries, she baked often and a lot.

I add yeast to the milk, sugar 1 tablespoon, salt about one teaspoon, stir it all and add so much flour to make the sour cream thick. I leave it all for 30-40 minutes.
During this time, the dough begins to bubble.

I add eggs, vegetable oil, sour cream to the "suitable" dough, stir everything well and add flour. (In total, it takes a little more than a kilogram of flour.) And I start kneading the dough, it should turn out to be homogeneous, elastic, not very sticky and not thick, you know ... the golden mean that your hands will feel, so my mother said!

I leave the kneaded dough for about an hour, it all depends on the temperature in the room, the warmer it is, the less time it takes for the dough to come up and increase in volume.
