Tengo orígenes italianos y parte de mi vida la pasé en Italia. Por eso escribo estos post sobre la cocina italiana. Con conocimiento de causa.

Incluso mis blogs -que pueden consultar al final de este artículo- están redactados en lengua italiana.

La cocina es parte integrante de la cultura de toda sociedad, y en Italia alcanza su expresión más genuina como reflejo de esa cultura.

Los tipos y sabores de la comida varían de una región a otra, lo que a su vez ha sido influenciado por años de tradición y por la influencia de otras comunidades, geografía, historia y medio ambiente.

Así han nacido dos tipos distintos de cocina: la de la montaña y la del mar, las dos formas geográficas predominantes en toda la península itálica ya que la llanura representa un espacio minúsculo en el conjunto del territorio.

Algunas personas usan el término cocina como una obligación, la mayoría de nuestros ancestros restaron este concepto, mientras que otros lo usan como un pasatiempo o un discurso de marketing en esta era de las redes sociales.

En la época moderna, el concepto de cocina y por ende de cocinar difiere del concepto que tenía esta palabra en épocas antiguas o no tan modernas cuando se limitaba a saciar el hambre, la cantidad de alimentos y no la calidad de los mismos.

Hoy en día es el arte de preparar la comida y presentarla de la mejor manera posible (¡la comida entra por los ojos!) y también de intentar competir y mostrarla lo más bonita posible utilizando los ingredientes más ricos y naturales.

En Italia la cocina es puro arte, no porque el producto final sea en sí mismo una obra de arte, sino porque la pasión que se pone en la cocina no tiene nada que envidiar a la pasión del artista al crear su obra.

I have Italian origins and part of my life was spent in Italy. That's why I write these posts about Italian cuisine. Knowingly.

Even my blogs -which you can consult at the end of this article- are written in Italian.

Cuisine is an integral part of the culture of every society, and in Italy it reaches its most genuine expression as it is a reflection of that culture.

The types and flavours of food vary from region to region, which in turn has been influenced by years of tradition and by the influence of other communities, geography, history and environment.

Hence, two distinct types of cuisine have been born: that of the mountain and that of the sea, the two predominant geographical forms throughout the Italian peninsula since the plain represents a tiny space in the whole of the territory.

Some people use the term cuisine as an obligation, most of our ancestors subtracted this concept, while others use it as a hobby or a marketing discourse in this age of social networks.

In modern times, the concept of cuisine and therefore of cooking differs from the concept that this word had in ancient or not so modern times when it was limited to satisfying hunger, quantity of food and not its quality.

Nowadays it is the art of preparing food and presenting it in the best possible way (food enters through the eyes!) and also trying to compete and display it as beautifully as possible using the richest and most natural ingredients.

In Italy cooking is pure art, not because the final product is in itself a work of art, but because the passion that goes into cooking has nothing to envy the passion of the artist in creating his work.
