Yesterday I had a craving for something in particular. I wanted it to be super filling and also sweet. It needed to be portable and delicious when kept at room temperature. I wanted it to feel like a treat. And boy, did it ever.
Apple Rolls
Ingredients:
1 apple
1 tbsp Earth Balance
3 tbsp apple butter
4 tbsp sunflower butter
2 tbsp apple juice
1/4 tsp cinnamon
1 tbsp brown sugar
1 piece of lavash bread
sprinkle of nutmeg
Slice the apple into 1/4 inch slices.
Melt Earth Balance in a skillet and add in the apple slices, apple juice, brown sugar, nutmeg, and cinnamon and stir.
Cook approx 15 minutes, until the apples are soft, 10-15 minutes. Then transfer the fried apple slices to a plate or bowl and let cool.
Take a bowl and the add apple butter and sunflower butter, stir until well combined.
Spread this butter mixture on the bread. Stop 1/2 inch from the edges.
On top of the butter put the fried apple slices.
Roll the sandwich.
Ta-da!
Pack it up and hop in the car! Or go to the park. Or jump on a plane. Or take a few steps, plop yourself down on the couch and eat immediately while you watch back-to-back episodes of your favorite serials.
