My Vegan Tofu Sandwich

Hahaha. I just ran out of meat and had nothing to cook with. I found some tofu and baked it thoroughly with soy sauce and maple syrup and a shot of hot sauce. I toasted these squares in the oven and started to make my sandwich.

Then I realized. I had no bread. I used seaweed paper instead. Finally I folded it up with the sandwich ingredients and ate pretty well. I helped myself to three of these. The tofu tasted good marinated and baked in the oven.

I'm not sure if it's good for health or good for the environment but it tasted good and I was satisfied. Next time I will look for bread before I make a sandwich.

Yes. That's what I was aiming at because I had saved up some slices of bread and reealized somebody else had got to them already. Now this turns out even healthier.

For 3 decades of existence, just this year was my first taste of that so called Tofu haha. A friend gave me, it was a Filipino recipe called Menudo.

Now, I'm craving.

It does look nice and healthy too. A fried tofu is a good source of protein however I can't over-indulge in consuming it because of the by-products that it produces in my body like uric acid plus phosphorus so I just eat some of it is served. @mineopoly

I understand biochemistry. Still it is frustrating thinking that you need proteins but your body can't deal with the byproducts. i wonder what you do eat. I guess just smaller quantities.

Hi @mineopoly, aside from having a seemingly permanent suppressed appetite problem, the way that my mother cooks is also a big factor for my difficulty in eating.

That is why whenever it is mealtime I am just forcing myself all the time so that I can just put some nutrition in my body and not to lose anymore weight. It sucks because I do not like this kind of life.

However my appetite comes back after dialysis, I can actually eat more but the day after that I do not have anymore desire to eat again.
