Pinikpikan is a contentious food that originated in the Philippines' Cordillera highland region. The soup is made with chicken and etag, which is cured and smoked meat stored in earthen jars underground. The way the chicken is butchered makes pinikpikan controversial: it is gently beaten to death with a stick in a ritual conducted by indigenous tribes.
The chicken is beaten to keep the blood inside, and it should not be bloody when cut if done correctly. During the beating and slicing operation, no bones should be fractured. However, the technique of preparation is illegal under the Philippine Animal Welfare Act of 1998.
