Take advantage of the mango season and prepared this delicious typical delicacy of our land, Mango Jelly, it is made with mangoes, sugar and a little vanilla, the result is a firm gelatin or delicacy with a tasty acid with a generally delicious flavor.
Mango is rich in iodine, vitamin C and turpentine, it is one of the fundamental elements of Thai, Cambodian and Indian gastronomy, and also of our beautiful Venezuela.
In the place where I live there are beautiful and lush mango trees so I decided to look for several of them to make my delicious jelly.
INGREDIENTS:

Cauldron and wooden spoon.
PREPARATION
1 Put the green mangoes together with a little water in a saucepan and cook covered until they are soft.
2 Let cool and separate the pulp of the mangoes from the seeds.
3 Strain the pulp, weigh and add an amount of sugar equivalent to the weight of the pulp.
4 Bring to the fire and when it boils, stir constantly with a wooden spoon, add vanilla and stir.
5 Cook until it comes off the bottom of the cauldron.
6 Pour the jelly into a bowl and let cool 1 hour.
Mango trees are large and leafy, they give a splendid shade and fruit by quantity, their leaves and bark are used to control hypertension.

I love mangos. Unfortunately where I live they cannot be grown. Mango Jelly must be wonderful. I will have to check in the grocery store and see if they have any. I am sure it will not be as good as homemade.
