Vegetables must be part of our daily meals because they have nutrients and fibers. They help with the digestion and we feel well after eating them. They are part of a light meal when we choose the ones that don't contain starch. This week we made a change in my diet because I am diabetic, and my husband went to the market to buy vegetables, and said that he didn't want to see me eating prohibited food.
The best vegetables for diabetic people are the green leaves like spinac, chards, lettuces of all kinds, vegetables like broccoli, couliflower, cucumber, avocados, tomatoes, red onions, eggplants, green beans, zucchini, celery, fennel, garlics etc.
You have to avoid starch food like bread, rice, potatoes and all kind of pastas. You can eat them but with moderation. If you are insulin dependent like me, you can eat some carbohidrates, but in very small quantities.
From this meal I am going to eat only the sauté chicken and the avoccados and the rest is for my children.
Ingredients you need:
- 1 chicken breat cut in pieces
- broccoli
- carrots
- 1 potato
- 1 onion
- 2 chilies
- green beans
- 2 garlic cloves
- olive oil
- chinese salt
- soy sauce
Preparation:
This meal is too easy to prepare.
- cut all the vegetables and the chicken breast
- add 2 tablespoons of olive oil in a pan
- put it on the fire
- sauté the chicken
- add the garlic, onions and chilies
- cook moving all the time
- add the rest of vegetables all cut at your taste
- add 1 teaspoon of chinese salt and 1 tablespoon of soy sauce
- adjust the salt at your taste
Serve hot. I served it with one cup of galic rice and avocados.
It is not difficult to have a good meal if you are diabetic, it is a matter of culture and creating habits.
