I used to cringe daily when I pondered upon this thought as if creating health conscious meals was a chore. Well actually it was until I decided to change our diet.
It took me some time, but I finally found a plan that suits our taste as well as our diet. Incorporating much needed veg yet adding that balance of great taste and protein to our meals.

This chicken and cashew noodle bowl is packed with protein and a balance of tantalising vegetable. If you often fail to get your greens into your meals this is a great way to camouflage that.
Ingredients:
Egg Noodles
500g Chicken Strips
Onions
Spinach
Cabbage
Sesame Seeds
Cashews
Soy Sauce
As an alternative to chicken you may use calamari as indicated in the above pic.
Overall, your lunch hours will never be a bore and you can certainly play around with the toppings to suit your taste buds.
